Turkish broccoli with yogurt

We are real broccoli fans - at least some of us are. But this broccoli recipe is the ultimate hit with us. Where did we get it from? We don't know.

 

One day, it was 2017 and we were still living in Austria, we had some broccoli and Turkish rice from the previous day at home. We quickly cooked the broccoli, topped it with garlic yogurt and garnished it with butter tomato sauce. And it was delicious! We don't know exactly where the idea came from. But even if we weren't aware of it, broccoli with yogurt is probably not that unusual. 

 

However, this Turkish broccoli recipe was obviously inspired by manti. Because it's the combination of garlic yogurt and the sauce that makes manti such a treat. We don't have a manti recipe on the blog yet, but we do have a few other recipes with the combination of garlic yogurt and butter tomato sauce. There are the delicious Yogurtlu Eriste, the simple Fake Manti or the Potato Borani. Regardless of this, we eat garlic yoghurt quite often - it just tastes too good!

 

Our Turkish broccoli with yoghurt has been very popular with our relatives. After we served Turkish-style broccoli for the first time at our mother(-in-law's) house, it became a go-to dish there too. Not so much as a main course, however, but much more as breakfast.

In Turkey, warm and sometimes hearty dishes are simply part of breakfast, which is why broccoli fits in well here. We served the broccoli directly in the pan in which we cooked it and garnished it with yogurt. The pan was placed in the middle of the table and we ate the broccoli and yogurt together (mainly the (in-law) dad, as he couldn't get enough of it). The last drops of the yoghurt and butter sauce mixture are then topped with bread - perfect. 

 

Incidentally, in Turkish this broccoli recipe is called "yogurtlu brokoli", i.e. broccoli with yogurt. The recipe is quick and easy to prepare, very tasty, light and vegetarian. You can serve it on its own as a main course or with bread or rice. However, broccoli with yogurt is also delicious at breakfast or as a side dish to various dishes. Afiyet olsun!

 

Yogurtlu brokoli: Turkish broccoli with yogurt recipe

Ingredients

  • 1 broccoli (or from the frozen food shelf)
  • Water and salt for cooking

For the garlic yogurt

  • 500 grams/2 cups Greek yogurt
  • 2 cloves of garlic
  • salt

For the sauce

  • 1 tbsp butter
  • 1 tsp paprika powder
  • 0.5 tsp tomato paste
  • a dash of water

To garnish

dried mint *

pul biber*

Preparation

 

Step 1: Cut the broccoli into heads and cook with water and salt.

Step 2: While the broccoli is cooking, mix the yogurt with salt and the pressed garlic cloves. Waiting makes the garlic taste more intense.

Step 3: Once the broccoli is cooked, place it on a plate and garnish with the garlic yogurt. For the sauce, melt a tablespoon of butter, roast the paprika powder and tomato purée in it and deglaze everything with a dash of water.

Step 4: Drizzle the sauce over the broccoli and garnish with dried mint and Pul Biber.
