Sulu Kofte: Turkish stew with meatballs

Comfort food...soul food...call it what you will, but stews make you happy. Heartier than a soup, finer than a dry main course with a side dish - just the culinary embrace you need sometimes.

 

But the best thing for us is that there are an incredible number of stews in Turkish cuisine. Chickpeas, white beans, green beans, lentils, potatoes - stews are probably on the table (or floor) every day in many Turkish households. Until now, however, we have neglected them on the blog and concentrated on the elaborate, unusual dishes of Turkish cuisine. Big mistake - Turkish home cooking is so delicious.

 

That's why we're showing you our Sulu Kofte recipe today. In English: watery meatballs/meatballs with water. Put more simply: soup with meatballs and potatoes.

 

Sulu Köfte are ideal for the whole family and a real Turkish children's meal. After all, you can't really go wrong with small meatballs and potatoes. At least we think so.

How do you prepare sulu köfte?

The secret of a good sulu kofte recipe is that the meatballs must not fall apart. That's why they are kneaded with finely ground bulgur*, which is also used for cigköfte, and rolled in flour. We also add an egg, but this is not the case in all sulu kofte recipes. But to be honest, we don't want to change a tried and tested recipe. We can do without disintegrating meatballs and disappointment...

 

Once the meatballs have been prepared, the stew is simply made with onion, paprika and tomato paste, spices and potatoes. When the water is boiling, add the meatballs. Let it boil a little and the stew with meatballs is ready! You can serve it with yoghurt, bread, salad or Turkish rice.

Sulu Kofte recipe: Turkish stew with meatballs

Ingredients

 

  • 250 g/0,5 lb minced meat (beef)
  • 2 tbsp fine bulgur
  • 1 tsp paprika paste (biber salcasi*)
  • 1 egg
  • 2 cloves of garlic (crushed)
  • 0.5 tsp cumin
  • 0.5 tsp paprika powder
  • salt & pepper
  • 3 tbsp flour for rolling

Preparation

Step 1: Prepare the meatballs. To do this, mix all the ingredients for the köfte well in a mixing bowl.

Step 2: Place the flour in a shallow dish or on a large plate. Form small meatballs from the mince mixture and place them on the flour. Once you have used up all the mixture, roll the meatballs once in all the flour.

Step 3: Now fry the chopped onion in 2 tablespoons of oil. Add the peeled and chopped potatoes. Fry everything. Now add the paprika and tomato paste. Stir. Finally, add the spices and salt and deglaze with water. The water must cover everything.

Step 4: When the stew is boiling, add the meatballs. Cook the sulu köfte with the lid on over a medium heat for 20 minutes.
