Half omelette, half pancake... Unfortunately, we didn't know how else to describe kaygana. The delicious breakfast looks like pancakes. However, there is far more egg and less flour inside - so it's an omelette after all. But hey, there's no flour in an omelette! Well, half omelette, half pancake then.

What is kaygana?

Kaygana are Turkish pancake omelettes with lots of herbs. The batter for the kaygana recipe consists mainly of eggs and a little flour, milk and salt and is quick to prepare. However, the Turkish omelettes are made special by the herbs. Dill, parsley and spring onion... as much as you want! Preferably a lot. However, we have not used spring onion.

 

Our pancakes with cheese and parsley are a similar Turkish recipe. Here, however, the batter is much firmer and the cheese is incorporated directly into it. The batter for the kaygana must be very liquid and can be baked to any thickness.

 

The kaygana is best eaten with some sheep's cheese/salted cheese, fresh vegetables and tea. Afiyet olsun!

Kaygana recipe: Turkish omelette with herbs

Ingredients (approx. 6 omelettes)

  • 4 eggs
  • 110 g/1 cup flour
  • 200 ml/1 cup milk
  • plenty of dill, parsley and spring onion (to taste)
  • 0.5 tsp salt
  • oil for frying

Preparation

Step 1: First chop the herbs. For the batter, whisk the eggs and milk. Add the flour and salt. Now stir in the chopped herbs for the kaygana recipe.

Step 2: Bake one ladle of batter at a time in a greased pan on both sides.
