What do you associate with Turkish cuisine? For us, it's the strong aromatic scent and the summery colors of pointed peppers, tomatoes and parsley. These are also the typical ingredients that should not be missing in a Turkish dish. Whether for breakfast, in the kofta, in the stew or in the salad - these three things are present in every Turkish meal. And if you want to know what scent we mean, then try out this Turkish recipe.
Because today we want to show you our acili ezme, which translates as "spicy paste/something mashed". Here, peppers, tomatoes, onions, garlic, parsley and a few other ingredients are mixed or chopped into a paste. It's hard to put the smell of this into words. Hot and spicy, yet so light and summery. Perfect for a cold dinner with bread or as a side dish for a barbecue!
In Turkey, for example, acili ezme is served alongside most meat dishes in restaurants. It can be quite spicy here - and it should be! In our Turkish recipe, however, you can of course determine the degree of spiciness.
Tip for our acili ezme recipe
Acili ezme should be a paste and therefore not watery. But how do you achieve this with the amount of tomatoes? There are probably many people in Turkey who would argue against using a chopper for this Turkish dish. Many people write in their recipes "that the vegetables must be cut by hand". This is the only way to avoid too much juice.
Well... we used the chopper.
This makes the preparation of the Acili Ezme recipe quick and easy. If you still want to prepare the 101% authentic Turkish dish with the consistency of a paste, simply sieve the acili ezme in a fine sieve.
By the way: What other delicacy does the Acili Ezme remind you of? That's right, lahmacun! Because for this, minced meat, oil and spices are simply added to the acili ezme. So if you have any of this mezze (Turkish starter) left over, you already know what you'll be having tomorrow... Afiyet olsun!
